Cherry Sweet Preserve

Our cherry sweet is made from crunchy cherries of the Rupkovo variety, originating from the mountainous Pella region, famous for its abundant waters, waterfalls and lakes. At an altitude of 650 meters, in the foothills of the Voras mountain (also known as Kaimaktsalan) and in the shores o f the Vegoritis lake in the Pella prefecture, cherries have found their home. Following a unique production process, we have managed to preserve the crunchy texture, the aroma and the flavor of the fresh fruit and create a sweet with a sturdy body, intense personality harmony and shelf life – to be eaten on its own but also ideal to accompany yogurt and ice cream, while its syrup is ideal to smear on creamy sweets.

• The fruit
The cherry tree belongs to the genus Prunus and is a relative of the sour cherry tree. The tree can live up to 60 years and starts producing fruit from the 4rth year and on, while big yields have to wait until its 20th year. It can adapt to various types of soils but prefers those that do not contain calcium. It has big white blossoms set in clusters. It originates in the Caucasus region and has been introduced in Europe from very early on, while all the available varieties are derived from the wild Cherry Tree. The fact that it was adored by Lucullus is quite revealing in its own right. When he saw the tree for the first time the Roman general opened up his eyes and when he tasted the fruit his appetite opened up – and we all know what this meat. When he returned to Italy he almost forced the cultivation of the tree upon his fellow Romans. There are many varieties of cherries, generally pertaining to two big categories, those with soft and those with crunchy flesh. In Greece there are many varieties cultivated, while Greek cherries are considered of superior quality. Annual production stands at approx. 43,000 tones, bringing the country at the 10th place globally. It can adapt to various types of soils but prefers those that do not contain calcium.
